Slow Cooker Teriyaki Chicken Drumsticks

Every busy mom needs go-to, quick and simple recipes for family dinner.  I enjoy using my slow cooker to make family dinner easier on my busy schedule. This is a simple Asian inspired dish that I discovered from the book Paleo for Beginners by John Chatham. It’s a meal you can toss in your slow cooker early in the morning, and then by dinner have a delicious, tender chicken dish the whole family will enjoy. You can substitute a whole chicken cut-up or use mini drummetts as I did in the video below.

Ingredients

1 lb-2 lbs of free-range, organic chicken drumsticks

1/2 cup of orange juice, 1/2 cup of BRAGGS amino liquids or soy sauce

1 tsp. fresh garlic or garlic powder

1 tsp. fresh ginger, minced ( You can buy fresh ginger already minced in a squeeze bottle-see video)

Fresh ground pepper, to taste

Spray your slow cooker with non-stick cooking spray of your choice. Place your drumsticks in the slow cooker and turn it on low heat.  Combine remaining ingredients in a small bowl. Mix well. Pour mixture over chicken. Cover and cook on low 5-6 hours, or until tender. Turn chicken occasionally so it is thoroughly covered in sauce.

Serve with quinoa, kale, or even a mixed green salad.

1 serving of chicken is 3-4 drummetts or 1 larger drumstick= 1 RED on the 21 day fix meal plan
