Egg White, Cheese and Avocado Breakfast Sandwich
While recently staying in the hospital with my mom, I discovered a breakfast sandwich that I loved. So I decided to recreate it here at home. Simple, easy and packed with protein and healthy fats to really get your day going with tons of energy as a busy mom, teacher or singer!
2 egg whites
1/2 slice of your favorite cheese
2-3 slices of avocado
1 whole grain sandwich thin
Take two egg whites and whisk in a bowl. Spray a small frying pan with EVOO cooking spray. Then pour egg whites into pan and gently form into a small-medium circle shape. Cook on each side about 2-3 minutes. Toast 1 whole grain sandwich thin. (I like the Arnold’s brand best) While sandwich thin is toasting, turn off heat for egg. Take 1/2 slice of your favorite cheese and lay on top of egg and allow to melt. Place cooked egg whites with cheese on toasted sandwich thin and add 2-3 slices of avocado for a delicious and healthy breakfast!
