Chicken Bacon Ranch Salad
For the last month, I’ve been researching and learning about a nutrition plan called the Kenogenic Diet. Basically, take everything you’ve ever learned about nutrition and flip it on it’s head and you have the Kenogenic diet. For the first time in years, I am enjoying more healthy fats in my nutrition such as grass fed butter, avocados, cheese, bacon and more. And I’m loosing weight! Amazing how you can feel so much better just by changing your nutrition. I was willing to make a few minor adjustments and I not only got the scale moving again, I also boosted my confidence! In addition, I’ve been focused on eliminating foods that cause inflammation in my diet. It’s really been amazing! And I feel great! I’m finding the source of the food is just as important as the food item itself. (more on that to come later)
Below is one of the recipes I tested last week. It’s one of my favorites so I wanted to share it with you too! Be prepared to feel like you are enjoying a “cheat” meal! Leave me a comment if you are also using the Kenogenic diet or if you try this recipe! Enjoy!

Yield: 1 serving
2 cups of leafy greens
3 slices of grass-fed bacon- cooked ( I pre-cook mine and store in refrig)
1-2 free range organic chicken tenders cooked (I pre-cook mine and store in refrig)
1/4 cup chopped tomatoes
1/4 cup shredded cheese
1/4 avocado sliced
2 tbsp. full fat ranch dressing
2. Top with cooked bacon and chicken
3. Top with cheese, avocado and dressing
