I love the smell of muffins baking in the oven. They fill the kitchen with the scents that remind me of homemade baked goods from mom.

You can bake these light and airy apple banana muffins at any time of the year, and they are a great way to enjoy a little treat or have a grab and go breakfast option!
- Nonstick cooking spray (optional)
- 1½ cups almond flour
- 3/4 tsp. baking powder, gluten free
- 1 dash of sea salt (or Himalayan salt)
- 2 ripe mashed up bananas (1 cup)
- 1 Tbsp organic grass-fed butter
- 2 LARGE eggs , lightly beaten
- 1/2 cup apple, chopped (about 3/4 cup)
Preheat oven to 350° F.
Prepare 9-10 muffin cups by lining with muffin papers or coating with spray.
Combine almond flour, baking powder, and salt in a medium bowl; mix well. Set aside.
Combine eggs, banana, and butter in a large bowl; mix well.
Add almond flour mixture to egg mixture; mix well blended.
Add apples; mix until just blended.
Evenly divide batter among prepared muffin cups.
Bake for 16 to 18 minutes, or until golden brown and tester inserted into the center comes out clean.
Transfer muffins to rack; cool.
